We usually focus on style and such on this site, but there is also likely a large overlap with the cooking community as well (I love spending time in the kitchen myself). A brand called Sakuto reached out a few weeks ago offering to send a knife over if I would share some thoughts about it on the site, and I agreed.
Overall, I’m pretty happy with it. It’s certainly a bit flimsier in the actual blade than, say, a Shun or similar, but comes out of the box razor sharp, feels great in the hand, and they offer a wide array of pretty nicely decorated handles. Their pricing is similar to the lower end lines from Shun, and it’s honestly something of a toss up between the two brands (I own several Shuns as well). In all, I would say Sakuto is a great option if you’re looking for a nice, affordable, Damascus steel chef’s knife, or similar.
